SHRIMP, CRAYFISH & CRAB
Take 2 lbs of new potatoes, wash and quarter. Place in baking dish. Lightly coat potatoes with olive oil. Toss. Sprinkle potatoes with Rustler's Rub®, toss and sprinkle again. Bake in oven at 300 degrees for 45 min or until tender. Remove and serve.
Rustler's Deviled Eggs
Boil 4 eggs. Place on a container of ice water when done. When the eggs are cool enough to handle peel off the shell. Cut in half lengthwise and remove the yolk leaving the white whole, set aside. Take the yolks and mash. Add 1 tsp apple cider vinegar, 2 tbs dukes mayonnaise, 1/4 tsp sugar and mix. Put the yolk mixture back in the whites and sprinkle with Rustler's Rub®.
Rustler's Potato Salad
Boil 4lbs of potatoes whole for 1 1/2hrs. When done cool them to the touch. Peel and dice into chunks. Add 1 1/2 cups chopped celery, 1 1/4 cups yellow mustard, 1 1/4 cups pickle relish, 3 tbs Rustler's Rub®, 2 1/4 cups Dukes mayonnaise, and 3 chopped hard boiled eggs. Mash together until it tis the consistency you want, then refrigerate.
Combine 1/2 cup milk, 1 cup yellow cornmeal, 1 cup all purpose flour, 1 1/4 tbs of Rustler's Rub® seasoning in a bowl until blended. Heat 1 cup oil in skillet to about 375. Take 1 lb fresh okra cut into thick slices, dip the slices into the batter and fry for 4 - 5 min until crispy. remove and place on paper towels.
Susan's Cheese Log
Take two 8oz packages of cream cheese and let soften. Stir in one 4oz can of chopped green chilies including juices. Shape into a log and refrigerate. When the cream cheese has firmed and right before serving, roll the log heavily in Rustler's Rub® and serve with tortilla chips.
